Butterflied Leg of Lamb

Ingredients:

  • 1 Leg of lamb

  • ½ C Apple Cider Vinegar

  • 3 Tbs Teeny Tiny Spice Company Za’atar

  • A couple of pinches of salt and a few grinds of black pepper

 

Instructions:

  1. Butterfly a leg of lamb

  2. Place the lamb in a non-reactive pan and drizzle with apple cider vinegar, sprinkle on the Za’atar and add salt and pepper.

  3. Allow to marinate at room temperature for 1 hour or overnight in the fridge.

  4. Heat your grill to high heat.

  5. Remove the lamb from the pan and sear each side on the grill over high heat for 5 minutes. Move lamb to a cooler section of the grill or turn the heat down (Grill temp 350°to 450°).

  6. Cook until the internal temp of the lamb is 135°-140°F.

  7. Remove from heat and allow it to rest, covered, for 10 minutes.

  8. Slice and serve with another sprinkling of Za’atar.
