Butterflied Leg of Lamb
1 Leg of lamb
½ C Apple Cider Vinegar
3 Tbs Teeny Tiny Spice Company Za’atar
A couple of pinches of salt and a few grinds of black pepper
Butterfly a leg of lamb
Place the lamb in a non-reactive pan and drizzle with apple cider vinegar, sprinkle on the Za’atar and add salt and pepper.
Allow to marinate at room temperature for 1 hour or overnight in the fridge.
Heat your grill to high heat.
Remove the lamb from the pan and sear each side on the grill over high heat for 5 minutes. Move lamb to a cooler section of the grill or turn the heat down (Grill temp 350°to 450°).
Cook until the internal temp of the lamb is 135°-140°F.
Remove from heat and allow it to rest, covered, for 10 minutes.
Slice and serve with another sprinkling of Za’atar.
