2 large or 4 small portions
1-2 C Chopped cucumber
1 Thick slice of red or sweet yellow onion
1 Small-medium vine tomato
1/2 Can tomato sauce (no sugar added!)
1 tsp Salt
1. Combine all ingredients in a large blender or food processor.
2. Blend well, until smooth.
3. Garnish with cucumber, cilantro, avocado or your favorite soup topping.
